Homemade Christmas Biscuits
You can’t beat the smell of freshly baked biscuits, hot out of the oven. This week, I paid the patisserie at the Hotel Concorde Berlin a visit to have a look, and of course a taste, of their chocolate-orange and almond cookies before they get taken down to the bar to be dunked in hot drinks, or taken along to the rooms to welcome guests upon arrival.
It would be rather cruel of me to tease you with biscuit photos if you are not within traveling distance of the Hotel Concorde Berlin. Luckily, I managed to persuade the lovely ladies in the patisserie to give me the recipes for these delicious treats, so grab your mixing bowls and aprons and let’s bake!
Almond biscuits
375g chopped almonds
10g baking powder
125 pistachio nuts
670g flour
4 eggs
10g salt
500g butter
500g brown sugar
Pre-heat oven to 170°C. Mix all of the ingredients together until they form a firm dough. Leave in the fridge for an hour. Remove and hack up into small pieces. Place on greaseproof paper on a baking tray, cook in oven for 10-12 minutes until golden brown. Leave to cool a little before tucking in!
Chocolate-orange biscuits
375g chopped almonds
10g baking powder
125 cocoa powder
670g flour
4 eggs
10g salt
500g butter
500g sugar
Same procedure as for the last biscuits? Same procedure for every biscuit!
